Job title: Sous Chef

Term of employment: Full -time, permanent

Weekly hours: 40 hours/week

Salary: $27/hour or $56160.00 CAD annually. In addition to base salary, position will also receive gratuities, dining allowance, uniform allowance, free parking, and extended health benefits, along with other additional perks as future incentives.

Location of Work: 2005 Highway 97 South. PG, BC V2N 7A3 and 4141-9 Airport Road PG, BC V2N 4M6

Primary Duties:

  1. Recipe Training
  2. Review procedures of recipes and request update of recipe book
  3. To ensure the correct “food production schedule” for each department (Prep/Line/Dishwasher) and for each crew to maximize effectiveness and efficiency of employees’ working schedule
  4. Review “Sensitive Inventory Item” sheet daily and take proper action for variance
  5. Review Opening and Closing Procedures Checklist completion each day
  6. Create and oversee Locals prep list
  7. Making sure that the staff are completing the loss forms daily
  8. Review loss forms and change par levels for prep based on the findings
  9. Review par levels and adjust
  10. Responsible for filling out an incident report during incident with committee
  11. Complete internal location transfers forms
  12. Coordinate monthly Inventory Counts with staff
  13. Training staff on how to use equipment safely
  14. Training staff on how to clean equipment properly
  15. Making sure compliance with food safety regulations is being done
  16. Direct staff during busy times
  17. Ensure that kitchen employees maintain hygiene standards
  18. Oversee and supervise kitchen staff
  19. Monitor and maintain the kitchen equipment, and arrange repairs and service as needed
  20. Control portion sizes with staff to ensure recipes are followed as per recipe book
  21. Assist in performance reviews
  22. Assist in proper receiving, storage, and rotation of products to comply with the standards

Skills and Qualifications:

  • Completion of secondary school is required
  • 5+ years of previous Sous Chef or Chef de Cuisine or similar experience in a team environment is required
  • 3+ years of previous leadership role in the kitchen, which include supervisory role of kitchen staff, performance review, recruitment, coaching is required
  • Able to perform the physical demand of a busy kitchen
  • Excellent knowledge of various cuisines and cooking techniques
  • Good English communication skills (language of work is English)
  • Passion for food & culinary excellence
